Kimchi is a health food of Korea and an important side dish that provided vitamins during the winter when vegetables were hard to come by. Every family makes kimchi right before the winter. The method is different for each region. In the northern regions, kimchi is mild and lightly flavored while in the warmer south, kimchi is made spicy and salty to last longer. The Seoul Metropolitan Government (SMG) hosts the Seoul Kimchi Festival in early winter to provide people with an opportunity to make kimchi.
